The MIYABI 6000MCT Gyutoh 24 cm is a versatile Japanese chef’s knife designed for precise cutting of meat and fish. Crafted in Seki, Japan, it features an authentic thin blade profile with a pointed tip for detailed work such as trimming and deboning.
The blade is made from SG2 micro-carbide powder steel, ice-hardened using the CRYODUR® process to a hardness of approximately 63 HRC, ensuring exceptional sharpness, durability, and edge retention. A hand-hammered Tsuchime finish reduces food sticking while adding a distinctive artisanal look.
Finished with a D-shaped Cocobolo pakkawood handle, the knife offers excellent balance, comfort, and control, allowing for effortless cutting with reduced fatigue.
