The MIYABI 6000MCT Santoku 18 cm is a versatile Japanese kitchen knife designed for precise cutting of meat, fish, and vegetables. Crafted in Seki, Japan, it features an authentic thin Japanese blade profile with a hand-hammered Tsuchime finish that reduces food sticking and enhances control.
At its core is SG2 micro-carbide powder steel, ice-hardened using the CRYODUR® process to approximately 63 Rockwell, delivering exceptional sharpness, durability, and edge retention. The blade is hand-honed on both sides using the traditional Honbazuke three-step process for clean, effortless cuts.
The ergonomic D-shaped Cocobolo pakkawood handle with integrated counterbalance ensures excellent balance, comfort, and reduced fatigue during extended use.
