Exquisite Blade Craftsmanship
Each knife features a SG2 micro-carbide powder steel core layered and finished with a hand-hammered Tsuchime pattern to reduce food sticking while adding a striking aesthetic. The blade is hand-honed using the three-step Honbazuke process to achieve an ultra-sharp edge of 9.5–12° per side (katana-style), honoring the precision of samurai swords.
Superior Hardness and Edge Retention
The CRYODUR ice-hardened blade reaches a Rockwell hardness of 63 HRC, ensuring exceptional durability, long-lasting sharpness, and reliable performance in demanding kitchen tasks.
Elegant Ergonomic Handle
The D-shaped handle is crafted from Cocobolo pakkawood and features brass and red spacers, a mosaic pin, and a stainless steel end cap. This design provides ergonomic comfort and control for fatigue-free cutting, while complementing the beauty of the hammered blade.

I’m a salmon and trout angler. I was happy with using this tool to pin bone pink salmon as it was able to pull two out at a time. I tried it on a fresh chinook last night though and wasn’t very impressed, I think needle nose pliers would have been more effective.

The Hayami 130 arrived promptly and very sharp, one of the sharpest knives I've ever received from a vendor. It's convenient to have it razor sharp out of the box. I use petty knives a lot, just above my use of the cleaver. This knife is beautiful and extremely functional. The next petty knife will be about 100mm.

But I would recommand to put some flax oil (or mineral) on the handle before use.
