Premium Blade Construction
The blade features a FC61 fine carbide steel core for superior initial sharpness and long-lasting edge retention. Surrounded by 48 layers of stainless steel, it forms a beautiful Damascus pattern that combines aesthetic appeal with durability. The blade is FRIODUR ice-hardened to approximately 61 Rockwell hardness.
Hand-Honed Precision
The edge is sharpened using the traditional Honbazuke three-step honing process, producing a razor-sharp finish. The symmetrical blade allows full use of the cutting edge without a finger guard, suitable for both left- and right-handed users.
Ergonomic Handle Design
The black Pakka wood handle features a decorative mosaic pin and stainless-steel end-cap, providing balance, comfort, and precise control during extended kitchen use.

I’m a salmon and trout angler. I was happy with using this tool to pin bone pink salmon as it was able to pull two out at a time. I tried it on a fresh chinook last night though and wasn’t very impressed, I think needle nose pliers would have been more effective.

The Hayami 130 arrived promptly and very sharp, one of the sharpest knives I've ever received from a vendor. It's convenient to have it razor sharp out of the box. I use petty knives a lot, just above my use of the cleaver. This knife is beautiful and extremely functional. The next petty knife will be about 100mm.

But I would recommand to put some flax oil (or mineral) on the handle before use.
