The Hinoura Ajikataya Sujihiki Knife 240mm is a hand-forged Japanese slicing knife designed for effortless precision when cutting meat, fish, or large vegetables. This long, narrow blade is part of the Ajikataya (味方屋) series by Mutsumi Hinoura, a master fourth-generation bladesmith based in Sanjō, Niigata—a region celebrated for its rich blacksmithing heritage.
Crafted from premium White #2 carbon steel (白紙二号鋼), the blade features a traditional kurouchi (黒打ち) finish that helps protect against rust while showcasing the character of hand-forged steel. The Sujihiki’s slim profile reduces drag for clean, elegant slices—ideal for carving roasts, trimming proteins, or slicing sashimi.
The handle is made from natural chestnut wood in a traditional octagonal (八角) shape, providing a comfortable, secure grip that balances the long blade beautifully.
