The Hinoura Ajikataya Gyuto Knife 210mm is a hand-forged Japanese chef’s knife crafted for versatility, precision, and lasting performance. Made by Mutsumi Hinoura, a fourth-generation bladesmith from Sanjō, Niigata, this knife is part of the prestigious Ajikataya (味方屋) line, a continuation of a family tradition dating back over a century.
Forged from high-carbon White #2 steel (白紙二号鋼) with a rustic kurouchi (黒打ち) finish, this Gyuto offers excellent edge retention, fine grain for easy sharpening, and a responsive feel that chefs love. The gently curved belly and pointed tip make it ideal for rocking cuts, slicing meat, and detailed vegetable work.
