The MIYABI 5000 FCD Gyutoh 16cm is a versatile Japanese chef’s knife designed for everyday kitchen use. Ideal for slicing larger cuts of meat and vegetables, this knife combines traditional Japanese craftsmanship with modern steel technology to deliver outstanding sharpness, balance, and durability.
Exceptional Blade Craftsmanship
At the core of the blade lies FC61 fine carbide steel, renowned for its excellent initial sharpness and superior edge retention. Surrounding the core are 48 layers of steel, creating a striking Damascus pattern that is both beautiful and functional. The blade undergoes FRIODUR ice-hardening to achieve a Rockwell hardness of approximately 61, ensuring long-lasting performance.
Razor Sharp Performance
Each knife is sharpened using the traditional Honbazuke honing process, a three-stage grinding, sharpening, and polishing method performed by master craftsmen in Seki, Japan. The result is a razor-sharp edge with perfect cutting precision. The symmetrical edge allows use by both right- and left-handed chefs, while the absence of a finger guard ensures the entire length of the blade is usable.
Ergonomic and Elegant Design
The pakka wood handle is accented with a decorative steel mosaic pin and stainless-steel end cap, offering both durability and beauty. A seamless transition between handle and bolster provides comfort and helps prevent calluses during extended use.
Care Instructions
