Authentic Japanese Craftsmanship

Crafted in Japan from V-Gold No. 10 (VG-10) high-carbon stainless steel and finished with a 33-layer Damascus pattern, this chef knife is ground to a steep 15-degree edge and hardened to 59-60 HRC for elite sharpness and edge retention. Full-tang construction with a laminated wooden handle delivers the heft and balance serious cooks expect from authentic Japanese cutlery.

Care & Maintenance

Hand-wash only with mild soap and warm water; dry immediately. Do not put in the dishwasher. Hone regularly and sharpen with a Japanese whetstone (1000/3000 or 1000/6000 grit) to maintain the factory edge.
