The MIYABI Iki Chef’s Knife is a top-tier Japanese all-purpose kitchen knife, crafted for chefs who demand peak performance. Each knife is meticulously handcrafted in over 130 steps by master artisans in Seki, Japan, ensuring exceptional quality, balance, and precision.

The blade features a 49-layer Moonlight Damascus pattern, unique to the Iki series, surrounding an ultra-hard MC66 steel core (66 HRC) that is CRYODUR® ice-hardened for remarkable sharpness, durability, and long-lasting edge retention. The blade is hand-sharpened using the traditional Honbazuke method for a precise 9.5°–12° edge angle and finished with a special edge grind for enhanced cutting performance.
