The MIYABI Iki Santoku Knife is an exceptional Japanese chef’s knife, meticulously handcrafted in over 130 steps by master artisans in Seki, Japan. Designed for precision slicing of meat, fish, and vegetables, it merges traditional craftsmanship with modern performance.
The blade features a 49-layer Moonlight Damascus pattern, exclusive to the Iki series, surrounding an ultra-hard MC66 steel core (66 HRC) that is CRYODUR® ice-hardened for outstanding sharpness, durability, and long-lasting edge retention. The symmetrical cutting edge is hand-sharpened using the traditional Honbazuke method for a precise 9.5°–12° angle.
Paired with a beautifully hand-shaped dark maple wood handle, the knife is perfectly balanced and ergonomically designed for superior control, making it a top-tier Santoku for any kitchen.
