MIYABI 6000MCT Sujihiki Knife – Handcrafted in Seki, Japan

The MIYABI 6000MCT Sujihiki Knife is designed for precision slicing of meat and fish. Its long, pointed blade allows effortless cutting at various angles, while the ergonomic D-shaped Cocobolo pakkawood handle provides comfort, balance, and control for fatigue-free cutting.

The blade features a MC63 micro-carbide powder steel core sandwiched between two layers of steel and is finished with a hammered “Tsuchime” texture. Advanced processes, including CRYODUR® ice-hardening at -196°C, deliver a Rockwell hardness of approximately 63. Hand-honed using the traditional Honbazuke method, the blade achieves exceptional sharpness and durability.
