The MIYABI 6000MCT Gyutoh Knife is a versatile Japanese chef's knife designed for cutting, chopping, and precision work with meat and fish. Its pointed blade allows effortless tasks such as removing bones, while the smooth, authentic Japanese profile ensures long-lasting sharpness and safety during use.

The blade features a SG2 micro-carbide powder steel core encased in two additional layers for durability. Advanced techniques, including CRYODUR® ice-hardening and a hammered “Tsuchime” finish, provide exceptional hardness (~63 Rockwell), flexibility, and corrosion resistance. Hand-honed using the traditional Honbazuke process, the dual-edged blade ensures precision and speed in every cut.

The D-shaped Cocobolo pakkawood handle is ergonomically shaped with a gentle arch, offering optimal balance, comfort, and control for a wide variety of cutting techniques. This handcrafted knife from Seki, Japan, combines performance, durability, and elegance in one superior chef’s tool.
