The MIYABI 6000MCT 16 cm Gyutoh Knife is a precision Japanese chef's knife designed for slicing fish, meat, and vegetables with ease. Its pointed, smooth blade allows effortless cutting and exceptional control, making it perfect for daily kitchen tasks.
The blade is made from a SG2 micro-carbide powder steel core encased in two additional layers for durability. Ice-hardening at -196°C using the CRYODUR® process ensures superior hardness (~63 Rockwell), sharpness, and edge retention. The hand-honed blade features an authentic Japanese profile with a hammered “Tsuchime” finish, combining aesthetics with functionality.
The D-shaped Cocobolo pakkawood handle is ergonomically bent and well-balanced, providing comfort and control for extended use. Handcrafted in Seki, Japan, this Gyutoh knife offers unparalleled performance, durability, and Japanese craftsmanship.
