The MIYABI 5000 FCD Shotoh 9cm is a nimble Japanese vegetable knife designed for cutting, peeling, and preparing small fruits and vegetables. Handcrafted in Seki, Japan, it combines precision, durability, and ergonomic comfort.
Premium Blade Construction
The blade features a FC61 fine carbide steel core surrounded by 48 layers of Damascus-design steel. Ice-hardened using FRIODUR technology, it offers exceptional sharpness and edge retention. The symmetrical, double-edged blade is honed with the traditional Honbazuke method for a razor-sharp 9.5–12° angle per side, suitable for both right and left-handed use.
Ergonomic Handle Design
The Pakka wood handle includes a steel mosaic pin and end cap, seamlessly joining the half-bolster to reduce thumb and forefinger calluses. Lightweight and balanced, the knife allows effortless cutting with precision control.
Care & Maintenance
For optimal performance, hand wash only and sharpen using a whetstone. Avoid using glass, ceramic, or stone cutting boards to maintain the sharpness of the blade.
