Superior Blade Performance
The blade is made from FC61 fine carbide stainless steel, ice-hardened using the FRIODUR® x2 process to reach 61 Rockwell hardness. This results in excellent durability, corrosion resistance, and long-lasting edge retention. The Honbazuke hand-honing technique gives the blade a razor-sharp edge of 9.5–12°, while the Katana-style cut pays tribute to traditional Japanese sword-making craftsmanship.
Elegant and Functional Handle
The handle is crafted from Pakkawood, impregnated and dimensionally stable for durability. Its octagonal shape ensures a secure and ergonomic grip, while the mosaic pin adds a refined detail. With a rounded spine and heel, this knife is designed for comfort during long prep sessions.
