The Miyabi 6000 MCT 8 Inch Gyutoh is a precision-crafted Japanese chef's knife designed for effortless cutting and separating of fish and meat with exceptional control.
Featuring a 20cm blade with a pointed tip and sturdy profile, this Gyutoh delivers clean, precise cuts every time. The Japanese blade profile combines high-cutting quality with outstanding comfort for professional and home cooks alike.
The blade is built from a Micro-Carbide Powder Steel core wrapped in two additional layers of steel, hammer-forged for a striking appearance reminiscent of the Tsuchime design. Each blade undergoes multiple ice-hardening processes at -196°C, achieving a final hardness of approximately 63 Rockwell.
Finished by hand using Honbazuke Honing and polished on both sides, the Miyabi 6000 MCT 8 Inch Gyutoh is paired with a durable Pakka Wood handle that offers perfect balance, flexibility, and fatigue-free performance.
