The MIYABI 5000 MCD Chutoh 16 cm is a precision Japanese knife designed for slicing and cutting meat and fish with exceptional control. Its thin yet stable blade allows accurate, effortless work, making it a favorite among professional chefs worldwide.
The blade core is crafted from SG2 micro-carbide powder steel, surrounded by 100 layers of stainless steel, creating the striking 101-layer Flower Damascus pattern. Ice-hardened using the CRYODUR® process to approximately 63 Rockwell, the blade offers outstanding sharpness, durability, and edge retention. Hand-honed using the traditional Honbazuke three-step process, it delivers scalpel-like precision.
Finished with a traditional D-shaped Masur (Karelian) birch handle, the knife provides excellent balance, comfort, and a refined visual contrast to the Damascus blade. Handcrafted in Seki, Japan.
